Fish Grilling Suggestons

We will be down in a couple of weeks and looking for some suggestions/ recipies on grilling grouper or Amberjack .





I am hoping grouper will be available .

Jimmy38 - Grouper is a soft fish, so I recommend getting one of those ';cages'; (fish grillers that has a top and bottom with a handle) to use. Otherwise you may be pulling it off the grile in pieces. You can find them at most grocery stores.

I grill alot of fish. Just oil the grill after you get it good and hot and the fish will come off easy.





You can always use a simple marinade of Italian dressing for either grouper or amberjack. Or just baste with some butter, lemon and white wine and then sprinkle Tony Cacheres cajun seasoning is also very tasty.





Amberjack is also great for making fish-k-bobs. I cut the fish into nice cubes and then marinate in the Italian dressing and then put on the kbobs with mushrooms, pineapple chunks, peppers, onions and a cherry tomato.





If you see scamp at Destin Ice or Sextons, get it. It is in the grouper family and is usually smaller and the tastiest of the grouper family. Also, Destin Ice sells grouper cheeks for about half the price of the filets. The cheeks are very sweet, are boneless and are also great for kbobs or for a fish fry and are already in bite size chunks.

We have used Sextons in the past so that will be easy .





One last question . How long to cook ? Any specifics on that . I can see myself cooking it beyond recognition if not careful .

How long? Depends on the thickness of your filets. On a hot grill about 6 minutes per side. When the fish begins to flake you%26#39;ll know it%26#39;s done.





I also grill tuna covered in ground green peppercorns where I just char the outside and leave it rare to raw in the center and then serve with a wasabi soy sauce. Slice thin for killer charred sashimi.

a friend of mine has been experimenting with rubs and has developed a really nice seasoning for fish or chicken using tang as the main ingredient. yes! that tang. combined with a mixture of sea salt, course ground black pepper, some lemon pepper, paprika, and trace ammounts of garlic, celery salt and some secret ones he won%26#39;t reveal. it%26#39;s real good though! good luck!




We have a recipe we really like for cooking fish indoors. We got some Cobia at Destin Ice and it was delicious, although I think it%26#39;s out of season now. Anyway, don%26#39;t have it in front of me but this is close. Season the filet as desired, then lightly bread it in corn meal after dredging in milk and cook in butter. Tent the fish to keep warm. Add some more butter, green onions, chardonay, and a little fresh lemon juice to the pan and reduce in half. Drizzle over the fish and enjoy.

Got it as a present one year from my cousin. I won%26#39;t be without it. One of my favorite things to do is get some scallops wrapped in bacon, cover them with this herb and grill. (n the fish basket I mentioned above)
